	<title>Low Carbohydrates</title>
	<description>The holiday season is synonomous with weight gain.  Between Thanksgiving and the New Year we all expect to pack on a few pounds, which of course we try desperately to take off after having made our New Year's resolution.  But, for those of us on a trying to maintain low carbohydrates thye holidays can be something to be feared.  Many of us have worked hard to keep up with our diets and the last thing we want to do is run it, only to have to start over from day one of the diet once the season has come to its dismal end.  

Make it a holiday with low carbohydrates 
There is no reason to get all down in the mouth this holiday season, you just might have to be bit more creative when it comes to the meal preparation.  Thanks to all of the time and energy that many others have put into solving this problem there is now a lot of information that is readily available to help you make your holiday dinner with low carbohydrates, and you don't even have to sacrifice the taste.  The idea is not neccessarily to substitute traditional dishes with something that has low carbohydrates, but rather to covert those dishes into low-carb ones.  Stuffing is actually easier than ever to make with low carbohydrates as there are a number of breads on the market now that have reduced carb levels.

There are a few tricks that can make your conversion process a bit easier.  First, take a good look at the recipe that you want to make, concentrating on the sugar and flour amounts.  If there is not much flour in something and it is just added as a thickener, try using plain gelatin or xanthan gum instead, eggs are also great thickeners, but have low carbohydrates.

For recipes that call for milk, you can often get the same result by simply watering down cream.  Some recipes are not the same without the milk and in this case you can use whole milk which has more fat, but less carbs.  There are a lot of simple things that you can do to make a major change in your holiday meal without canging any of the taste or the traditions.
