	<title>Low Carb Recipes</title>

Low Carb Recipes for Breakfast
Since bacon, eggs, sausage and cheese are things that are limited on most diets, breakfast is the most fun meal of the day! Think of all the tasty combinations of the above ingredients you see. And check out these low carb recipes:

Omelette
2 eggs
dash salt
dash pepper
1 Tablespoon butter
1/2 cup diced ham
1/4 cup shredded cheddar cheese

1. Break both eggs into a mixing bowl and beat lightly with a fork. Add in salt and pepper and beat a little more.
2. Heat the pan over medium heat until butter is melted. Pour in the eggs. 
3. Wait about 20 seconds, and then add the ham. 
4. Cook covered for 1-2 minutes, until the top is still wet but mostly firm. 
5. Add cheese and fold one corner over about 2/3 of the way across. (If it's too wet, the ingredients will just slide off. If it's too dry, the fold won't "stick" and will spring back to flat.) 
6. Cook for another minute and serve hot.

Breakfast "Muffins"
10 small slices of Candian Bacon 
6 eggs 
1 1/2 cup ZeroCarb Baking Mix (by CarbSense) or Atkins Baking Mix 
2 cups heavy cream 
1/2 teaspoon salt 
1/4 teaspoon pepper 
2 cups grated cheese (cheddar or Swiss) 

1. Preheat oven to 350.
2. Cut up Candian bacon.
3. Coat muffin tin with cooking spray or line with paper muffin cups.
4. In medium bowl, combine eggs, baking mix, heavy cream, bacon, cheese, salt and pepper together.
5. Scoop 1/3 cup of batter into each muffin cup.
6. Bake for 25 minutes.


Low Carb Recipes for Lunch
Lunch can be tough on a low carb diet. But you don't have to have anything big or elaborate. Try one of these low carb recipes:

Chicken Wrap
1 large low-carb whole wheat tortilla
1-2 Tablespoons mayonnaise
1-2 Tablespoons guacamole
1-3 oz. grilled chicken strips
1-2 lettuce leaves
2 slices crisp bacon
3 slices tomatoes
1-2 sliced onions
4-5 black olives, sliced

1. Spread the mayo and guacamole on the tortilla.
2. Top with lettuce, tomato, onion, olives, bacon and chicken.
3. Roll up and cut in half.

Steak And Roasted Pepper Salad

11/2 lb. beef flank steak 
2 roasted red peppers  
6 Tbsp vegetable oil 
1 Tbsp balsamic vinegar 
3 Tbsp white vinegar 
1 Tbsp minced garlic 
1-1/4 tsp dry mustard 
2 cups romaine lettuce
1/4 Cup chopped red onion 
1 Cup cherry tomatoes, halved (or chopped red tomatoes)

1. Preheat broiler. Place flank steak on broiler tray and sprinkle with salt and pepper. Broil for about 5 minutes per side. Cool. Halve steak lengthwise. Slice across the grain of the meat into thin strips.
2. Cut roasted peppers into thin strips. Halve strips crosswise.
3. Blend oil, vinegars, garlic and dry mustard in a large bowl until well-mixed. Add steak strips, roasted pepper strips, lettuce and onion; toss to combine. Season with salt and pepper. Chill for at least two hours or up to eight hours. Mix in tomatoes and serve.

Low Carb Recipes for Supper
Try out one of these low carb recipes for supper tonight:

Bacon Cheeseburger Quiche
1 lb. ground beef
1 small onion, chopped
4 slices of crispy bacon, chopped
3 eggs
1/2 cup mayonnaise
1/2 cup Half-n-Half
8 oz. shredded cheddar cheese
Garlic powder to taste (optional)
White pepper

1. Preheat oven to 350.
2. Brown hamburger in skillet with onion
3. Remove hamburger and mix in bowl with bacon pieces, breaking up any larger clumps with a fork or pastry mixer until you have a fine mix. 
4. Drain any excess grease off and press into the bottom of a deep-dish pie pan. Set aside.
5. Combine remaining ingredients in mixer bowl and mix well. 
6. Pour mixture over beef "crust" and bake 40-45 minutes until top is browned and set. 
7. Cool 15-20 minutes before slicing. 

Sour Cream Chicken
6 boneless, skinless chicken breasts
12 pieces bacon
2 cups sour cream
1/4 cup heavy cream
4 Tablespoons soy sauce
1/4 teaspoon ground ginger
Salt and pepper to taste
3 Tablespoons butter

1. Preheat oven to 325.
2. Melt butter and distribute across the bottom and sides of a Corning or Pyrex casserole dish. 
3. Lightly fry bacon until partially done (not crisp). Wrap two pieces of pliable bacon around each chicken breast and arrange them in the baking dish. 
4. In small bowl mix sour cream, cream, soy sauce, and ginger. Pour over chicken, add as much or as little salt and pepper as you want, and bake at 325 for two hours. (Cover the dish with foil or a lid for the first hour and then uncover for the second hour.
