Hidden Carbs in Low Carb Foods
If you are in the early stages of a low carb diet and you are dilligent about doing it right, you're probably using a carb counter of some sort and reading labels like crazy. You don't want to give up all these carbs in vain--you want to lose weight! Because of that, you have to beware of the hidden carbs in low carb foods. For example, fillers are used in goods like artificial sweeteners (or anything made with artificial sweeteners like drink mixes, sugar free gelatin, etc.). These fillers could be any one of the following: maltodextrin, dextrose or corn syrup solids. These are all carbs, and most of them are in low carb foods.
Here are some low carb foods that have hidden carbs:
- Cream has .6 grams per ounce
- Cheddar cheese has .5 grams per ounce
- Swiss cheese has .9 grams per ounce
- Eggs has .6 grams each (large egg)
- Coffee has 0.7 grams per cup
- Metamucil has 2 grams per serving (not counting fiber) because it has maltodextrin
- Artificial sweeteners have 1 gram per packet because they are made with either dextrose or maltodextrin, depending on what kind of artificial sweetener you use.
Another group of low carb foods to watch out for is packaged deli meat. You might think that these don't have carbs because they are, in fact, meat. But most of these meats have been processed and have added preservatives. Here are some examples:
- Deli ham has 1-3 grams per 2-oz. serving
- Deli turkey has 1-3 grams per 2-oz. serving
- Deli beef has 1 gram per 2-oz. serving
- Hot dogs have 1-4 grams each
- Smoked sausage has 4 grams per serving
So instead of buying prepackaged meats, buy them from the deli. And when shopping for low carb foods, read your labels and of course, use your carb counter! That way you'll know the full impact of low carb foods from the onset.
