	<title>Low Carb Cookie Recipes</title>

Let's face it,  cookies and low carb just don't seem to go together.  I mean, how in the world can you make low carb cookie recipes  without giving up all of the things that make cookies so appealing.    Do the terms chewy, sweet, texture rich and low carb even go together?

Well, they can if you are interested in a delicious peanut butter creation that is surprisingly low in carbs.  This recipe proves that not all low carb cookie recipes are alike.  And, on top of the good taste you get a recipe that is fairly easy to prepare with only 1 gram of carb per cookie.    So, without further adieu, here's one of the low carb cookie recipes to tickle your tummy while keeping the carbs at bay. 

You will need the following:


1/2 cup plus 2 tablespoons of granulated Splenda sugar substitute
1/2  cup of oat flour
1 Cup of Soy Protein Isolate
1 teaspoon of baking soda
1/2  teaspoon of baking powder
1/2 cup of butter
1 cup of natural peanut butter with no sugar added
3 eggs
1/2 cup of heavy cream
1 1/2 teaspoons of vanilla extract
3/4 cup of finely chopped nuts
2 tablespoons of liquid lecithin
1 tablespoon of Glycerin


Begin by preheating the oven to 375 degrees.  In a small bowl, combine the Splenda, oat flour, soy protein, baking soda and powder and mix well.  In another bowl, coming butter and peanut butter and beat until fluffy.  Beat egg, cream, lecithin, glycerin and vanilla into the peanut butter mixture.  Slowly add the dry ingredients to the wet ingredients.  Beat until thoroughly combined.  Shake dough into 1 inch balls.  Place 2 inches apart on an ungreased cookie sheet.  Flatten using the tines of a fork.  Top each cookie with chopped peanuts or pecan and bake for 7-9 minutes or until golden brown.  Let them cool and then enjoy one of the best low carb cookie recipes around.
